This is great stuff. Rich and creamy with a great seafood taste. Try substituting leeks for the onion.
Serves: About 4 cups
Ingredients:
| Quantity | Description |
| 2 to 4 tbs. | Butter |
| 1/2 tsp. | Grated onion |
| 1 | sliver garlic |
| 1-1/2 pints | Oysters with liquor |
| 1-1/2 cups | milk use whole milk |
| 1/2 cup | cream |
| 1/2 tsp. | salt |
| 1/8 tsp. | White pepper or paprika |
| 2 tbs. | Chopped parsley |
1. Combine the butter, onion and garlic in the top of a double boiler over (not in) boiling water.
2. Sauté lightly.
3. Add the remaining ingredients (except parsley).
4. Place the pan over, not in, boiling water. When the milk is hot and the oysters float add the parsley and serve.
